Above all, the most essential element in their food preferences would be authenticity.

How World Flavors Are Influencing Recipes

World flavors, like those among Indian cuisine, are having a moment, which, with desired application, will continue on for a while. Spices like tamarind and turmeric are being called out for their flavorful versatility in meals, which are being highlighted in restaurants and retail meals. On the subject of fruity recipes, Calamansi, widely grown in the Philippines as well as Indonesia, is a citrus fruit reminiscent of lime. The juice of this popular Southeast Asian fruit, is being infused in beverages, marinades, and syrups. Citrus foundation in food is another essence on the rise.      

Ube, a purple yam, also ordinarily farmed in the Philippines, is gaining momentum. Ube has a sweet, nutty flavor, which can lend itself to desserts like ice cream and donuts, making it a popular selection for experimentation.

Of course, the demand for spicy flavors has been on the rise. The chili pepper, originating in Central and South America, is now grown worldwide. Chefs are topping off dishes with hot honey or adding chili oil to intensify depth. Consumers are fanatical about the revolution and this trend is not slowing down.  

On the opposite side of the flavor spectrum, floral notes are taking over, to provide an exotic profile to food and beverage. Notes of rose, hibiscus, and elderflower are among many florals being incorporated into recipes. With consumers craving natural ingredients, florals become an organic component used in the innovation of new products.     

 

How Flavors are Staying Relevant for Retail

Unlike restaurants that can change their menu at any time, food manufacturers must foresee appealing flavor profiles that will stay relevant long-term. Innovation is at the forefront of development, in order to inspire the curiosity of consumers. A considerable amount of research and testing is performed.

When manufacturers like Cafe Spice, integrate worldly flavors, they must forecast which ingredients will sell and if they are timeless enough to withstand the competitive landscape. Because consumers are driving flavor, it is important to stay cognizant of emerging trends. Of course, products that are nostalgic or re-inventions of products that are evocative of nostalgia are highly sought after.
